Analogue mixers - specifically unpowered mixing consoles - are just about the easiest part of the audio chain to make a decision about. Thesedays, most analogue consoles are compact, as digital consoles are doing the bulk of 'heavy lifting' for more than 24 inputs. So, back to analogue mixers, all you need to do is work out how many inputs you need, how many outputs you need, how much EQ you'd like, any special features like: insert point, direct outputs, onboard effects, subgroups and a matrix, and away you go!
